Nucata is crafted from premium Chandler variety walnuts grown in Moldova’s unique micro-climate. Nestled between the Prut and Dniester rivers, under the protection of the Carpathian Mountains to the north and close to the Black Sea to the south, our orchards thrive.

This specific geography, marked by a dramatic temperature difference of 15°C between day and night, causes the trees to work intensively and this results in the fruit developing intense and rich flavors found only here.

Together with Moldova’s dark, rich, nutrient-rich soil, this terroir creates a unique foundation for every bottle of Nucata.

Artisanal Care,
from Orchard to Bottle

Our orchards are meticulously cared for to the strictest international food safety standards.

Every June, near the summer solstice, the harvest begins.
Local community members from the North-Central region of Moldova hand-pick only the most velvety and milky walnuts to ensure unparalleled quality.

Each nut is then carefully washed and cut into halves, ready to reveal its true character.

The secret mix

Crafting Nucata involves more than tradition; it’s a fusion of artistry and flavors. Fresh lemon zest, cinnamon and a blend of secret spices are added, enriching the infusion with aromatic depths.
Locally sourced, distilled wheat alcohol forms the spirit’s base, anchoring the flavors.
For the first four weeks, the blend is stirred daily, encouraging the spices and walnuts to release their full potential. Then, a touch of sugar is added and the process continues with daily stirring for another four weeks to perfect the balance and complexity of the profile.

The liquid is then carefully filtered, capturing its pure, crafted essence. Each bottle of Nucata is filled, labeled and ready to tell a story of passion, craftsmanship and connection to its Dacian roots on its journey to the world.
